Ingredients
  

  • 2 cups raw rice
  • 1 cup jaggery
  • 1/2 cup water
  • 1/2 teaspoon cardamom powder
  • 1 tablespoon sesame seeds
  • 1 teaspoon dry ginger powder
  • 2 tablespoons ghee
  • Oil for deep frying

Cooking Instructions for Adhirasam Recipe
    Soak and Dry Rice
    1. Wash raw rice well and soak it in water for 4–5 hours. Drain completely and spread on a clean cloth. Let it dry slightly but not fully.
    Grind the Rice
    1. Grind the soaked rice into a fine powder using a mixer. Sieve the flour to remove coarse particles. Keep the flour soft and smooth.
    Prepare Jaggery Syrup
    1. Heat jaggery with water in a pan. Stir until it melts completely. Filter to remove impurities and make a clean syrup.
    Mix Syrup and Flour
    1. Slowly pour jaggery syrup into rice flour. Mix gently to form a soft dough. Add cardamom and dry ginger powder for flavor.
    Rest the Dough
    1. Cover the dough and let it rest for 6–8 hours. This fermentation helps develop soft texture and traditional taste.
    Shape the Dough
    1. Take small portions of dough. Flatten them into round discs using greased hands or banana leaf for traditional shaping.
    Heat the Oil
    1. Heat oil in a deep frying pan on medium flame. Make sure the oil is hot but not smoking before frying.
    Fry the Adhirasam
    1. Slide shaped dough gently into hot oil. Fry on low flame until golden brown on both sides. Turn carefully for even cooking.
    Drain Excess Oil
    1. Remove adhirasam from oil using a ladle. Place them on a plate lined with paper to absorb extra oil.
    Cool and Serve
    1. Let them cool slightly before serving. They become soft inside and slightly crisp outside after resting for a few minutes.

    Notes

    • Use aged rice flour for best texture
    • Do not overheat jaggery syrup
    • Dough should be soft, not runny
    • Resting time is very important
    • Fry on low flame only
    • Do not overcrowd the pan
    • Use clean oil for frying
    • Shape evenly for proper cooking
    • Add sesame seeds for flavor
    • Store in airtight container
