Crispy fried chicken sandwiches are one of my favorite comfort foods. These crispy fried chicken sandwiches bring together juicy chicken, crunchy coating, and soft buns.

Ingredients
  

  • 2 large chicken breasts cut into 4 pieces
  • 1 cup buttermilk
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 2 cups all-purpose flour
  • 2 tablespoons cornstarch
  • 1 teaspoon onion powder
  • 1 teaspoon baking powder
  • 2 cups vegetable oil for frying
  • 4 brioche burger buns
  • 8 pickle slices
  • 4 lettuce leaves
  • 4 tablespoons mayonnaise
  • 1 sliced tomato

    Prepare the Chicken
    1. Slice each chicken breast into two even pieces. Pound lightly if needed. This helps the chicken cook evenly and stay juicy during frying.
    Make the Marinade
    1. Mix buttermilk, salt, pepper, garlic powder, and paprika in a large bowl. Add the chicken pieces and coat them completely with the mixture.
    Let the Chicken Rest
    1. Cover the bowl and let the chicken marinate for at least twenty minutes. Longer marinating creates more flavor and keeps the meat tender.
    Prepare the Coating
    1. In another bowl, combine flour, cornstarch, onion powder, baking powder, and a little extra salt. Stir everything well until evenly mixed.
    Coat the Chicken
    1. Take each chicken piece from the marinade. Press it firmly into the flour mixture. Repeat once more for an extra crispy texture.
    Heat the Oil
    1. Pour vegetable oil into a deep pan. Heat it to 350°F. The correct temperature helps the chicken become golden without burning.
    Fry the Chicken
    1. Place chicken pieces carefully into the hot oil. Fry each side for about five minutes until golden brown and fully cooked inside.
    Drain Excess Oil
    1. Remove the chicken with tongs. Place it on a wire rack or paper towels. This keeps the coating crisp and prevents sogginess.
