For the Baklava
  • 12 sheets phyllo pastry thawed
  • 1 cup unsalted butter melted
  • 2 cups shelled pistachios finely chopped
  • ¼ cup chopped walnuts optional
  • 2 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground cardamom optional
For the Honey Syrup
  • ½ cup honey
  • ½ cup granulated sugar
  • ½ cup water
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon vanilla extract
  • 1 small strip lemon peel optional

    Prepare the Oven
    1. Preheat your oven to 350°F (175°C). Lightly grease a muffin pan with butter or non-stick spray. This helps the baklava bites release easily after baking.
    Make the Nut Filling
    1. Place pistachios, walnuts, sugar, cinnamon, and cardamom into a food processor. Pulse until finely chopped but not powdered. The filling should still have a little texture.
    Prepare the Phyllo Sheets
    1. Lay one sheet of phyllo pastry on a clean surface. Brush it lightly with melted butter. Repeat with three more sheets to create sturdy, flaky layers.
    Cut and Shape the Pastry
    1. Cut the layered phyllo into equal squares. Press each square gently into the muffin pan cups, creating small pastry shells with slightly folded edges.
    Fill the Pastry Cups
    1. Spoon the pistachio mixture evenly into every pastry cup. Press gently so the filling stays in place without crushing the delicate pastry layers.
    Bake Until Golden
    1. Bake the baklava bites for about 18 to 20 minutes. The pastry should become golden brown, crisp, and beautifully flaky around the edges.
    Prepare the Honey Syrup
    1. While the pastries bake, combine honey, sugar, water, lemon juice, vanilla, and lemon peel in a saucepan. Simmer for about five minutes until slightly thickened.
    Add the Syrup
    1. Remove the hot baklava bites from the oven. Slowly spoon the warm honey syrup over each bite. Let them cool completely so the syrup soaks into every layer.

    Notes

    • Keep phyllo pastry covered with a damp towel.
    • Brush every layer with melted butter.
