Cooking Instructions for Gourmet Berry Mousse Cake
    Prepare the Cake Batter
    1. Preheat your oven to 350°F. Mix eggs and sugar until fluffy. Add oil, milk, and vanilla. Slowly add flour, baking powder, and salt. Mix gently.
    Bake the Sponge Cake
    1. Pour the batter into a greased cake pan. Bake for 20 to 25 minutes until golden. Check with a toothpick before removing the cake.
    Cool the Cake Completely
    1. Remove the sponge cake from the oven. Let it cool inside the pan for ten minutes. Then place it on a rack until fully cooled.
    Prepare the Berry Mixture
    1. Add berries, sugar, and lemon juice into a saucepan. Cook over medium heat until berries become soft and juicy. Let the mixture cool.
    Blend the Berry Puree
    1. Blend the cooked berries until smooth. Strain the mixture if you want a smoother mousse. Set the berry puree aside while preparing the cream.
    Prepare the Gelatin
    1. Mix gelatin powder with cold water. Let it sit for five minutes. Warm gently until dissolved. Do not boil the gelatin mixture.
    Whip the Cream
    1. Beat heavy cream with powdered sugar and vanilla. Continue mixing until soft peaks form. Avoid overmixing because the cream can become too thick.
    Combine the Mousse Mixture
    1. Add berry puree and melted gelatin together. Fold the whipped cream gently into the berry mixture. Mix slowly to keep the mousse light.
    Assemble the Cake Layers
    1. Place the sponge cake inside a cake ring. Pour the berry mousse over the cake. Spread evenly using a spatula.
    Chill the Cake
    1. Place the cake in the refrigerator for at least six hours. This allows the mousse to become firm and creates clean slices.
    Add Fresh Decorations
    1. Remove the cake carefully from the mold. Decorate the top with fresh berries and mint leaves before serving.
    Slice and Serve
    1. Use a sharp knife to cut clean slices. Serve chilled for the best taste and texture.
