  • 1 whole turkey 5–6 kg
  • 1 cup green olives sliced
  • 1/2 cup capers
  • 1 large onion chopped
  • 6 garlic cloves minced
  • 1/4 cup olive oil
  • 1 cup tomato sauce
  • 1 tablespoon oregano
  • 1 tablespoon paprika
  • 1 teaspoon black pepper
  • 1 tablespoon salt
  • 1 tablespoon vinegar
  • 1 cup chicken broth
  • 2 bay leaves

    Clean the Turkey
    1. Wash the turkey properly and remove any excess water. Pat it dry using paper towels to ensure better seasoning absorption and even roasting.
    Prepare the Marinade
    1. In a bowl, mix olive oil, garlic, vinegar, paprika, salt, pepper, and oregano. Stir well until all ingredients combine into a rich marinade paste.
    Season the Turkey
    1. Rub the marinade all over the turkey, including inside the cavity. Let it sit for at least one hour so flavors can deeply absorb.

    Place Turkey in Roasting Pan

    Add Broth and Bay Leaves
