Ingredients

  • 12 ounces spaghetti
  • 2 cups cooked shredded chicken
  • 2 cups shredded sharp cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 can cream of mushroom soup 10.5 ounces
  • 1 can cream of chicken soup 10.5 ounces
  • 1 cup chicken broth
  • 1 medium onion diced
  • 1 green bell pepper diced
  • 1 red bell pepper diced
  • 2 garlic cloves minced
  • 2 tablespoons butter
  • 1 teaspoon paprika
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ¼ teaspoon cayenne pepper optional
  • 2 tablespoons chopped fresh parsley

Method

Cooking Instructions
    Cook the Spaghetti
    1. Bring a large pot of salted water to a boil. Cook the spaghetti until just tender. Drain the pasta and keep it aside while preparing the creamy sauce.
    Cook the Vegetables
    1. Melt butter in a large skillet over medium heat. Add diced onion and bell peppers. Cook until soft, then stir in garlic and cook for another minute.
    Make the Creamy Sauce
    1. Add cream of mushroom soup, cream of chicken soup, and chicken broth to the skillet. Stir slowly until the mixture becomes smooth, creamy, and well combined.
    Add the Seasonings
    1. Mix paprika, Italian seasoning, salt, black pepper, and cayenne pepper into the sauce. Stir well so every spoonful is full of balanced and rich flavor.
    Add the Chicken
    1. Fold the shredded chicken into the creamy mixture. Stir gently until every piece is coated and warmed through for a tender and delicious texture.
    Mix in the Pasta
    1. Add the cooked spaghetti along with one cup of shredded cheddar cheese. Toss carefully until the pasta is completely covered with the creamy chicken sauce.
    Fill the Baking Dish
    1. Transfer the mixture into a lightly greased baking dish. Spread everything evenly with a spoon to help the casserole bake perfectly from edge to edge.
    Add the Cheese Layer
    1. Sprinkle the remaining cheddar cheese and mozzarella cheese over the top. This creates a beautiful golden crust with melted cheese in every bite.
    Bake the Casserole
    1. Place the baking dish in a preheated 350°F oven. Bake for about 30 minutes until the cheese is bubbly and lightly golden around the edges.
    Rest Before Serving
    1. Remove the casserole from the oven and let it rest for five minutes. Sprinkle chopped parsley on top and serve while warm and creamy.

    Notes

    • Cook the spaghetti until slightly firm.
    • Freshly shredded cheese melts more smoothly.
    • Rotisserie chicken saves preparation time.
    • Taste the sauce before adding extra salt.
    • Do not overbake the casserole.
    • Let the dish rest before serving.
    • Add mushrooms for extra flavor.
    • Use full-fat cheese for the best texture.
