Ingredients
  

For the Beef Kababs
  • pounds 680 g lean ground beef
  • 1 small onion finely grated
  • 3 garlic cloves minced
  • 2 tablespoons fresh parsley chopped
  • 1 tablespoon fresh cilantro chopped
  • 1 teaspoon paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • ½ teaspoon black pepper
  • 1 teaspoon salt
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • 1 tablespoon olive oil
For the Vegetables
  • 1 red bell pepper sliced
  • 1 yellow bell pepper sliced
  • 1 zucchini sliced
  • 1 red onion cut into wedges
  • 1 cup cherry tomatoes
  • 2 tablespoons olive oil
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Method
 

Cooking Instructions
    Preheat the Oven
    1. Heat your oven to 425°F (220°C). Line a large sheet pan with parchment paper or lightly grease it with oil. This helps prevent sticking and makes cleanup much easier after cooking.
    Prepare the Beef Mixture
    1. Place the ground beef into a large bowl. Add grated onion, garlic, parsley, cilantro, paprika, cumin, coriander, garlic powder, onion powder, salt, pepper, and olive oil. Mix gently until everything combines.
    Shape the Kababs
    1. Divide the beef mixture into eight equal portions. Shape each one into a long oval or sausage shape. Press gently so every kabab stays together while baking in the oven.
    Season the Vegetables
    1. Place the peppers, zucchini, onion, and tomatoes into another bowl. Add olive oil, salt, and black pepper. Toss everything well until every vegetable is evenly coated with seasoning.
    Arrange on the Sheet Pan
    1. Place the shaped kababs on one side of the baking tray. Spread the vegetables around them in a single layer. Leave small spaces so everything roasts evenly.
    Bake Until Almost Done
    1. Bake for about 20 minutes. Carefully turn each kabab halfway through cooking. Stir the vegetables gently so they brown nicely and cook evenly on every side.
    Broil for Extra Color
    1. Turn on the broiler for two to four minutes. Watch carefully while the kababs brown slightly. This gives them extra flavor without drying out the beef.
    Rest and Serve
    1. Remove the tray from the oven. Let the kababs rest for five minutes before serving. This keeps the juices inside the meat and makes every bite tender.
