Ingredients
  

For the Taco Shells
  • 12 small flour tortillas
  • 3 tablespoons melted butter
  • ½ cup granulated sugar
  • 1 teaspoon cinnamon
For the Cheesecake Filling
  • 8 ounces cream cheese softened
  • ½ cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream
  • 1 tablespoon lemon juice
For the Strawberry Crunch Topping
  • 1 cup crushed golden sandwich cookies
  • ½ cup freeze-dried strawberries crushed
  • 3 tablespoons melted butter
For Decoration
  • 1 cup fresh strawberries chopped
  • Extra whipped cream

Cooking Instructions
    Prepare the Taco Shells
    1. Cut tortillas into smaller circles if needed. Brush both sides with melted butter. Mix sugar and cinnamon together, then coat each tortilla evenly with the sweet mixture.
    Shape the Taco Shells
    1. Carefully fold tortillas into taco shapes. Place them between oven rack spaces or use molds to hold their shape while baking until crisp and golden.
    Bake the Shells
    1. Bake taco shells at 375°F (190°C) for about eight to ten minutes. Remove them carefully and allow them to cool completely before adding filling.
    Make the Cheesecake Filling
    1. Beat softened cream cheese with powdered sugar and vanilla until smooth. Add heavy cream and lemon juice. Continue mixing until the filling becomes thick and creamy.
    Prepare the Strawberry Crunch
    1. Combine crushed cookies, crushed freeze-dried strawberries, and melted butter in a bowl. Mix well until the crumbs become slightly coated and have a beautiful strawberry color.
    Fill the Taco Shells
    1. Transfer cheesecake filling into a piping bag or zip bag. Pipe the creamy filling inside each cooled taco shell until nicely filled.
    Add the Crunch Topping
    1. Sprinkle strawberry crunch mixture over the cheesecake filling. Press gently so the topping sticks and creates a delicious crispy layer.
    Decorate and Serve
