Ingredients
  

  • 8 ounces paneer cubed
  • 1 cup cauliflower florets
  • 1 cup broccoli florets
  • 1 red bell pepper chopped
  • 1 cup mushrooms sliced
  • 2 tablespoons vegetable oil
  • 1 medium onion finely chopped
  • 3 garlic cloves minced
  • 1 tablespoon fresh ginger grated
  • 2 teaspoons garam masala
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • ½ teaspoon turmeric
  • ½ teaspoon coriander powder
  • ½ teaspoon chili powder optional
  • 1 teaspoon salt
  • ¼ teaspoon black pepper
  • 2 tablespoons tomato paste
  • 1 can 14 ounces crushed tomatoes
  • ½ cup heavy cream
  • ½ cup plain yogurt
  • 1 teaspoon sugar
  • 2 tablespoons chopped fresh cilantro
  • Cooked basmati rice or naan for serving

    Prepare the Vegetables
    1. Wash and chop all vegetables into similar sizes. Cut the paneer into cubes. This helps everything cook evenly and gives every bite a balanced texture.
    Cook the Paneer
    1. Heat one tablespoon of oil in a skillet. Add the paneer cubes and cook until lightly golden. Remove from the pan and place them on a clean plate.
    Cook the Vegetables
    1. Add the remaining oil to the skillet. Cook cauliflower, broccoli, mushrooms, and bell pepper for about six minutes until slightly tender but still colorful.
    Make the Flavor Base
    1. Add chopped onion to the skillet. Cook until soft. Stir in garlic and ginger. Cook one minute until fragrant and the vegetables smell rich and fresh.
    Add the Spices
    1. Mix in garam masala, cumin, paprika, turmeric, coriander, chili powder, salt, and black pepper. Stir for one minute to release the wonderful aroma of the spices.
    Build the Sauce
    1. Add tomato paste and crushed tomatoes. Stir well until fully combined. Let the sauce simmer gently for about ten minutes so the flavors blend together.
    Finish the Curry
    1. Reduce the heat. Stir in heavy cream, yogurt, sugar, cooked paneer, and vegetables. Simmer gently for another eight minutes until everything becomes creamy and heated through.
    Garnish and Serve
    1. Sprinkle fresh cilantro over the curry before serving. Enjoy with hot basmati rice, naan bread, or your favorite flatbread for a complete and comforting meal.
